Most of you don't know that I'm unbelievably lazy when it comes to baking desserts & making sweets. I don't have the patience for a recipe that's super-labor intensive or time consuming, even though I usually love the out-come. And if it has a long list of ingredients? Forget it!
So, this recipe is basically perfect!
1 Cup Peanut Butter (I like crunchy for extra texture, but use what you like)
1 Cup Brown Sugar, Packed
1 Teaspoon Baking Soda
1 Egg
1/2 Cup Chocolate chips (I used semi-sweet, but choose your own adventure)
Preheat your oven to 350 degrees. Mix all ingredients together, except for chocolate chips. Once all wet & dry ingredients are mixed, stir in chocolate chips. The dough will be sticky. Roll dough into 1 1/2 inch balls and evenly place them on a parchment paper-lined cookie sheet. Bake for nine minutes and let cool for one minute on the cookie sheet before moving cookies to a cooling rack. All told, you should have about a dozen cookies.
You're going to want to enjoy these peanut buttery delights with a mason jar of milk or a steaming mug of strong Irish Breakfast tea to wash them down with.
